A classically styled, traditional-method sparkling wine made from 100% Pinot Noir. Looking lovely in the glass with its burnt-orange and golden hues, the nose is quite complex here; offering fresh-baked bread and biscuit-y character with orange marmalade and cardamom. On the palate, enjoy toasty apple cider notes, with layers of grapefruit, pomelo, apple skin and a slight dusting of white pepper. The finish is quite long, with lemon zest and a hint of spice which linger wonderfully. This isn’t a timid sparkling wine; it’s rich and full-flavoured enough to pair with a host of hors d’oeuvres, from pancetta-wrapped scallops and spring rolls to stuffed mushroom caps and bold cheeses.
