Made with fruit from an exclusive leased property in West Oliver. The fruit was harvested on September 16, 2021, and whole cluster pressed to stainless steel tank. After a short settling period, the juice was fermented at a low controlled temperature before being manually shut down to preserve a small amount of residual sugar. After a short ageing in tank, the wine was bottled in early February 2022.
Nose: lychee, lime, canned peaches, grapefruit, ginger, elderflower, honey, cinnamon
Palate: Medium-bodied with a bright acidity and a lingering, dry finish.
Pairing Suggestions: Highly spiced pork dishes, neutral soft cheeses, dried fruits, aromatic herbs
